Instructions
Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
In a large mixing bowl, combine the oats, brown sugar, wheat germ, flaxseed, cinnamon, salt, and brown rice flour.
In a separate bowl, whisk together the egg, honey, canola oil, and vanilla extract until well combined.
Make a well in the dry ingredients and pour in the wet ingredients. Mix everything together by hand or with a fork until fully incorporated.
Press the mixture evenly into the prepared baking pan.
Bake in the preheated oven for 20-30 minutes, or until the edges are golden brown and the bars are set. (For softer bars, bake for 20 minutes; for firmer bars, bake for 30 minutes.)
Remove the pan from the oven and let it cool for about 5 minutes.
While still warm, slice the bars into your desired size and shape.
Feel free to customize your bars by adding mini chocolate chips, craisins, slivered almonds, or any other favorite mix-ins.
Once completely cooled, store the grab-and-go bars in an airtight container for up to a week. Enjoy these wholesome treats on the run, at work, or any time you need a nutritious snack to keep you going!
