Healthy Grab and Go Bars
Ingredients
- 2 cups oats
- 1/2 cup brown sugar
- 1/4 cup wheat germ
- 1/4 cup flaxseed
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 cup brown rice flour or whole wheat flour, or all-purpose flour
- 1 egg
- 1/2 cup honey
- 1/2 cup canola oil
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
- In a large mixing bowl, combine the oats, brown sugar, wheat germ, flaxseed, cinnamon, salt, and brown rice flour.
- In a separate bowl, whisk together the egg, honey, canola oil, and vanilla extract until well combined.
- Make a well in the dry ingredients and pour in the wet ingredients. Mix everything together by hand or with a fork until fully incorporated.
- Press the mixture evenly into the prepared baking pan.
- Bake in the preheated oven for 20-30 minutes, or until the edges are golden brown and the bars are set. (For softer bars, bake for 20 minutes; for firmer bars, bake for 30 minutes.)
- Remove the pan from the oven and let it cool for about 5 minutes.
- While still warm, slice the bars into your desired size and shape.
