Pesach Chocolate Chunk Cookies

Pesach Chocolate Chunk Cookies


  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons oil
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 cups almond flour
  • 1/2 cup chocolate chips or chopped chocolate chunks


  • Preheat the oven to 350°F. Lightly grease a baking sheet or line it with parchment paper.
  • In a mixing bowl, combine the brown sugar, baking soda, salt, and oil. Mix until smooth.
  • Stir in the vanilla extract and egg until well combined.
  • Add the almond flour to the mixture, stirring until fully incorporated. Scrape the bottom and sides of the bowl, then mix for 1 minute at medium speed.
  • Gently fold in the chocolate chips or chopped chocolate chunks.
  • Using a tablespoon cookie scoop, drop the dough onto the prepared baking sheet, leaving space between each cookie.
  • Flatten the cookies slightly to about 3/8-inch thick.
  • Bake for 9 to 12 minutes, or until the cookies are golden brown.
  • Remove the cookies from the oven and let them cool on the pan for 2 minutes before transferring them to a wire rack to cool completely.
