Bourbon Salted Caramel Sauce

Bourbon Salted Caramel Sauce


  • 1/4 cup Cold Water
  • 1 cup Sugar
  • 1/2 cup Heavy Cream
  • 2 tablespoons Unsalted Butter
  • 1/2 Vanilla Bean
  • 1-2 tablespoons Bourbon
  • 1/2 teaspoon Maldon Salt


  • Begin by simmering sugar and 1/4 cup water over medium heat, swirling the pan occasionally, until it reaches a deep amber color, about 12-15 minutes. Be vigilant to avoid burning.
  • While the sugar mixture is cooking, warm the cream with the vanilla bean in a small saucepan. Remove the bean before proceeding.
  • Once the caramel is ready, slowly whisk in the warm cream and continue simmering until smooth, about 2 minutes.
  • Remove from heat and add Maldon salt, bourbon (adjust to taste), and butter. Return the saucepan to the still-warm burner and stir for another minute to fully incorporate.
  • Transfer the caramel to a heat-safe dish or mason jar and let it cool. Store covered in the refrigerator and bring to room temperature or heat in a warm water bath before serving. Alternatively, microwave the jar for 30 seconds before each use without altering the texture or flavor.
