Sinful Broccoli Bites Recipe

Sinful Broccoli Bites Recipe


  • 20 oz broccoli or spinach fresh or frozen (if using frozen, ensure it’s fully defrosted)
  • 1.5 tablespoons margarine
  • 1.5 tablespoons all-purpose flour
  • 1 cup non-dairy creamer or milk for dairy option
  • 3 eggs
  • 1/2 cup full-fat mayonnaise
  • 3 tablespoons onion soup mix
  • Salt and pepper to taste optional
  • Garlic powder to taste optional
  • Panko breadcrumbs for topping, optional


  • Preheat your oven to 350°F (175°C) and grease a 9-inch round baking dish or pie crust, or prepare muffin tins by spraying them well with cooking spray.
  • If using fresh broccoli or spinach, wash and chop them into small pieces. If using frozen, ensure it’s fully defrosted and drained of excess moisture.
  • In a microwave-safe bowl, melt the margarine in the microwave until hot. Add the flour to the hot margarine and mix well to form a smooth paste.
  • Stir in the non-dairy creamer (or milk) until well combined. Add the eggs, full-fat mayonnaise, onion soup mix, and garlic powder, mixing vigorously until the mixture is smooth and uniform. Season with salt and pepper to taste, if desired.
  • Add the chopped broccoli or spinach to the mixture and gently fold it in until evenly distributed. You can use an immersion blender to break up the broccoli or spinach slightly, but be careful not to overdo it—you want some small chunks for texture.
  • Pour the mixture into the prepared baking dish or muffin tins, filling them evenly.
  • If desired, sprinkle Panko breadcrumbs over the top of the mixture in the muffin tins for added crunch and texture.
  • Bake the Broccoli Bites in the preheated oven for approximately 1 hour for the round baking dish, or until the center is set and the edges are golden brown. If using muffin tins, bake until the tops are golden brown and crispy.
  • Once baked, remove the Broccoli Bites from the oven and allow them to cool slightly before serving.
