Preheat your oven to 350°F (175°C) and grease a 9-inch round baking dish or pie crust, or prepare muffin tins by spraying them well with cooking spray.
If using fresh broccoli or spinach, wash and chop them into small pieces. If using frozen, ensure it’s fully defrosted and drained of excess moisture.
In a microwave-safe bowl, melt the margarine in the microwave until hot. Add the flour to the hot margarine and mix well to form a smooth paste.
Stir in the non-dairy creamer (or milk) until well combined. Add the eggs, full-fat mayonnaise, onion soup mix, and garlic powder, mixing vigorously until the mixture is smooth and uniform. Season with salt and pepper to taste, if desired.
