Pesach Sea Salt Butter Toffees

Ingredients

  • 1 cup sliced almonds
  • 1 cup unsalted butter cubed
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup pecans chopped

Instructions

  • Line a baking sheet with parchment paper or a silicone baking mat, and scatter almonds onto the prepared baking sheet.
  • In a medium saucepan (preferably with a thick bottom to prevent burning), combine the butter, sugar, vanilla extract, and sea salt over medium heat.
  • Cook the mixture, whisking constantly, until the butter has melted and the mixture turns a rich almond brown color, about 10-15 minutes.
  • Immediately spread the hot caramel mixture evenly over the almonds on the baking sheet.
  • Sprinkle the chocolate chips over the hot toffee. After 1-2 minutes, spread the melted chocolate chips in an even layer until smooth.
  • Sprinkle the chopped pecans over the melted chocolate.
  • Let the toffee stand at room temperature for about 1 hour, or refrigerate if desired, until firm.
  • Once firm, break the toffee into bite-size pieces and store in an airtight container.
